Here is one excellent way to do so:
These make a great pick me up snack, loaded with healthy fats from the coconut oil and hempseeds. Honey is so good for you, too!
Coconut Snow Balls
1 cup coconut oil
6 TBSP honey (local, raw is best)
1 pinch sea salt
1 1/2 cups unsweetened coconut
1 tsp vanilla
1-2 drops peppermint essential oil
1 cup hempseeds
Mix first six ingredients together. Form balls, then roll in hempseed. Chill in freezer and serve cold. YUMMY! I just had one and they are good. I did think it is a little too sweet, so I would use only 4 TBSP instead of 6 or use NuNaturals Liquid Vanilla Stevia, that would be yummy, too!
So we never do things just as the recipe says ... we like to experiment.
Instead of rolling all of them in the hempseeds we rolled some of them in chia seeds (more amazing health benefits!). And instead of using peppermint for all of them we divided them up and made Lime, Grapefruit and Peppermint!
This recipe came off the back of the Nutiva Coconut oil from Costco. A winner!
